Honey Chillie Tequini

60 ml 1800 Anejo Tequila

1 chilli

1 tsp honey

1 tsp caster sugar

4 Lime Wedges

1 sheet of honeycombe

Chill martini glass. Muddle lime, castor sugar and 1/4 chillie. Add Tequila and honey. Shake on ice and double strain ito martini glass. Garnish with half chillie and piece of honeycombe .

Be caerful with the chillie - it is very easy to overdo it, so maybe start with less and taste before straining, if more kick required add extra finely sliced chillie and shake the hell out of it. If a little worried about how much chillie maybe don't muddle and cut coarser.
