8 oz. pineapple juice
1.5 oz. Bacardi Coco
1 Piece Pineapple Wedge
Mix 8 oz. of pineapple juice with 1.5 oz. of Bacardi Coco (or any coconut rum, Bacardi works the best with this, but Malibu or any other coconut rum would work fine). Shake well and garnish with 1 wedge of pineapple on an umbrella.
The best way to make this drink is to keep the Bacardi in the freezer until you're ready to make the drink. If you don't have sufficient time to chill the rum beforehand, shake with ice and strain the ice from the drink.
